    </figure><p>I used to be a foodie, but I no longer eat red meat or processed foods. The reason I stopped so abruptly over a year ago might shock you.</p><p>I didn't make the decision to give up those foods for health reasons—though doing so has benefited me in many ways. Nor am I not a vegetarian or a vegan—though my meat-eating habits have certainly changed.</p><h2>The Strange Reason I Changed My Diet</h2><p>I was standing in line at Food Lion on New Year's Eve on December 31, 2019. In my basket were some pigs' feet. I had planned on "eatin' good in the neighborhood," as the Applebee's slogan says.</p><p>When I put a couple of packages of pigs' feet on the counter, the cashier asked me how to cook them. As I was telling her, a man behind me jumped into our conversation and gave me his opinion about eating pork and red meat. What he said grossed me out so much that I haven't eaten those foods since.</p><p>I am deliberately not telling you his exact words because you might never beef, pork, or any red meat or processed food again. Every time I think of eating those foods, I remember what the man said and haven't been able to eat them.</p><figure>

    </figure><h2>What I Eat Now</h2><p>I used to go to Subway and ask the waitress which sub had the most meats. Then I would buy a foot-long sub with all the meats and fixings. It was so big that I joked that "When I eat a sub, I eat a sub." I requested it to be cut into three parts so I could have a piece for breakfast, lunch, and dinner.</p><p>Even though I love subs, I haven't had one in over a year because of the processed meats. Now I make my own wraps without pepperoni, salami, roast beef, ham, and the other meats. I have gotten used to my wraps, and they taste just as good as I remember the subs to be.</p><p>I used to love chopped barbecue, but I no longer eat it because I once saw some gristles in it that looked like something else. Therefore, I stay away from any food that is a mixture of ingredients. That is strange because I used to love processed foods so much that when I was five years old, I said I did not want to die because I did not want to leave all the "longie sausage" behind. Just think, I haven't had any bologna sausage, Italian sausage, smoked sausage, sausage patties, hot dogs, or hamburgers since 2019.</p><p>I have begun to use more spices and seasonings than before. Some of my favorites include cayenne pepper, red pepper flakes, Cajun seasonings, oregano, cinnamon, and hot mustard.</p><figure>

    </figure><h2>No More Fast Food Restaurants for Me</h2><p>I did not go to any fast food restaurants in 2020. I know the workers are wondering where I am. I have gotten into the habit of cooking my own food. That way I know what's in it. I used to eat supreme pizzas with all the meats, but no longer. I now purchase a cheese pizza and put my own toppings on it such as green peppers, red onions, spinach, mushrooms, and other vegetables I have on hand.</p><p>I eat a lot of stir-fry vegetables over rice. Sometimes I add shrimp to the mix, but I make sure the shrimp have been deveined.</p><p>I used to cook chicken livers because they are very inexpensive. I added green pepper and onions to the gravy, and they were so delicious. A Christian friend of mine said we shouldn't be eating animal organs. I no longer eat them, but I sure do miss them.</p><h2>Health Benefits of Not Eating Red Meat and Processed Foods</h2><p>I didn't stop eating red meat and processed food for health reasons, but I have observed many benefits resulting from clean eating. I didn't do it to lose weight, but I have noticed a significant change in my weight and love the way my clothes fit. I don't feel bloated hours after I eat as I did before I cut out a long list of foods.</p><p>I am a diabetic, and I have noticed that my blood sugar readings are within range. I eat throughout the day as I should, and I am never hungry. I am able to fall asleep faster, and I have more pleasant dreams. I don't suffer from headaches. I feel that my body, mind, and spirit are balanced.</p><p>Since I gave up eating processed food, I have noticed that I am not depressed as I used to be. I no longer have mood swings and memory issues. I have noticed that my skin is smoother, my hair is healthier, my nails are stronger, and my eyes are brighter. Eliminating red meat and processed food is not a fast, but I am experiencing some of the same effects as if I was fasting. My brain health is much better, my mind is sharper and I am more creative. My spirit is at a higher level, and I can hear from God much clearer.</p><p>I had no idea eliminating red meat and processed food would change my life so easily and so quickly. I admit that sometimes I think about what used to be my favorite foods, but I don't miss the foods enough to return to them. Now that I am in a rhythm of healthy, clean eating, I feel so good I don't intend to go back to my old ways of eating.</p><h2>Craving for a T-Bone Steak</h2><p>Once in a while I have a craving for a T-bone steak, but I know that if I eat one, I might not be able to stop again. Besides, I still remember what the man in the line behind me at Food Lion said.</p><p>I often cook chicken wings and catfish in my air fryer. I eat cream of mushroom soup, New England and Manhattan clam chowder soup. I also like lobster bisque.</p><h2>Ignoring Others' Advice</h2><p>When I share what I have been doing over the year, people offer advice and suggest what I can eat and cannot eat. They suggest plant-based foods, turkey burgers, and other such foods. However, I ignore the advice because I don't like mixtures. I no longer eat foods that I can't see and recognize the ingredients. Therefore, I stay away from "mystery meats."</p><p>I believe I was able to go over a year without eating red meat and processed food because it was my decision and not the advice of others. However, I know that I would not have been able to do it on my own if the man behind me in line at Food Lion had not said what he said. Each time, I was delighted with the results.</p><p>I had known about the service for a long time, but I live so close to grocery stores that I felt guilty for ordering food online and having it delivered when I could have gone to the stores and brought home my own food in no time at all. I live three minutes from Kroger in one direction and three minutes from Food Lion in the opposite direction.</p><p>I am glad I decided to give Amazon Prime a try especially since I don't have to pay for shipping because I have a Prime account. It was so easy and so much fun. I will continue to use the service and not feel guilty about it.</p><h2>Amazon Prime Membership</h2><p>Most people don't know that they can pay such a low amount for Amazon's wonderful services. The average person pays $12.99 a month. If you have Medicare or Medicaid, you can get a membership for much lower. Students pay less for an account.</p><p>I pay only $5.99 per month for my Amazon Prime membership. I use it for books, music, movies—and now for ordering food, as well. The biggest perk of having a membership is free shipping.</p><h2>Food Delivery Services</h2><p>Amazon has more than one food delivery service. Choose the one that is convenient for you and meets your needs.</p><p>You cannot mix the services. You can order from only one service at a time. There is Amazon Prime for items other than food. There is Amazon Pantry for food and household items. I prefer Amazon Fresh for groceries only.</p><h2>Pleasant Experience With Amazon Fresh</h2><p>I have a great system that I am pleased with. I make a spreadsheet of the items I intend to order. I compare the prices with those of Kroger, Food Lion, and Walmart. Most of the time Amazon Fresh is cheaper for the same item.</p><p>If the price changes for an item in my cart, I am notified before I place my order. Sometimes the price goes up by a few pennies, and sometimes the price also goes down.</p><h2>Amazon Fresh</h2><p>Other grocery delivery services have lower or no membership costs at all, but you must have an Amazon Prime membership to order food online and have it delivered. It is entirely free with no delivery fee. Even though there are a few rules to use this service, it is my favorite to use because I meet all the qualifications.</p><p>You must order at least $35 worth of food. If not, you will have to pay a small delivery fee, which is only $4.99. The first time I used the service, I ordered 51 items that cost $108.38. The second month, I ordered 44 items that cost $116.40. As you can see, I surpassed the spending threshold both times.</p><p>The first time I ordered online, it took me hours to look over the many foods available. I compared them to the grocery stores I customarily use. The second time was easier because the websites knew my pattern and offered suggestions. Even when I was ready to check out, a question was asked, "Did you forget to order this?"</p><p>Foods are paid for at the checkout before delivery. Most of Amazon services accept a credit card or a debit cards. Customers who have an EBT card may pay for many Amazon Fresh products that are eligible. However, they must use only Amazon Fresh and not Amazon Pantry for EBT eligible items.</p><p>Amazon offers a mixture of name brand items including Its own store brand, which is Whole Foods 365. After you have completed your order, you can choose which day and two-hour window you would like for your groceries delivered. You can schedule the time on the same day or a few days in advance.</p><figure>

Consumers can purchase meat, seafood, prepared foods, meal kits, salads, breads, snacks, and beverages including alcohol.</p><p>I was really impressed with how my food was packaged with care. The packaging was designed to keep items at the proper temperature during the short transport. Frozen foods and foods to be refrigerated were packed in insulated bags.</p><p>Trained shoppers only select products that meet Amazon's high standards for quality and freshness like the kind of products I would have picked myself. Fresh vegetables were not bruised or defected. Vegetables and fruits are large. My first order included a cantaloupe that was as big as some people's head. A green pepper, a cucumber, and an onion were also very large.</p><p>Amazon Fresh is now available in more than 2,000 cities and towns. Try Amazon Fresh. I think you will like it as much as I do.</p><figure>

No matter which brand you choose, you will save money by not having to purchase individual containers of spices just for one recipe. It is ideal for people who want a great taste without having to use 12-15 or more ingredients to achieve it. When you use this seasoning you won't have to use a lot of ingredients because all the seasonings you need are in the mixture.</p><h3><strong>Louisiana Cajun Seasoning</strong></h3><p>I favor this brand because it tastes great on many different foods. There are 227 servings in an 8-ounce container. Therefore, I get my money's worth even though one container of seasoning is not expensive.</p><p>The seasoning has no calories, no fat, and no carbohydrates. It does contain 290 milligrams of sodium. Therefore, it is recommended to use only 1 gram of the seasoning. That's about 1/4 teaspoon. So, you see a little goes a long way.</p><p>If you are cooking for people who are not fond of spicy food, you should use the seasoning sparingly. Cook for only 2-3 minutes. Stir halfway through the cooking time. Make sure the egg mixture doesn't bubble over.</p><h2>Steamed Vegetables</h2><p>To steam vegetables in a microwave, simply place them in a microwave-safe dish. After adding 2 or 3 tablespoons of water, cover with a lid or plastic wrap. Cook the vegetables on high for 3 to 7 minutes or until soft. Do not overcook.     </figure><h2>Baked Potato</h2><p>Who doesn't like a nice fluffy baked white potato or sweet potato? You can bake both in your microwave oven, and they will come out perfect every time. It takes a very short time for them to cook. They actually turn out much fluffier than baking them in your oven.</p><p>To prepare your potatoes, scrub them clean and poke several holes in them with a fork to give steam a way to escape.</p><p>It takes about 8 minutes for one potato to cook. Allow 12 minutes for two potatoes and 18 minutes for four potatoes. Turn the potatoes over halfway through the cooking time. When they are done, they will be soft and fluffy just the way you want them. Use your favorite toppings such as butter, sour cream, cheese, bacon bits, and chives on white potatoes and cinnamon on your sweet potatoes.</p><h2>Chicken Soup</h2><p>If you have a taste for homemade chicken soup, you don't have to wait a long time for the soup to be made on the stove. To save time, all you have to do is combine vegetables, chunks of chicken, and broth in a microwave-safe bowl. Season the soup the same way you would season it if you were cooking it in a big pot on top of the stove. Cover the bowl with plastic wrap so the liquid won't splatter.</p><p>Stir the soup several times to make sure all ingredients are heating. It should take between 15 and 30 minutes for the soup to be ready instead of letting it simmer for hours on the stove.</p><figure>

Stir and garnish with chives or top with bacon bits or other favorite toppings.</p><figure>

    </figure><h2>Egg Fried Rice</h2><p>You do have to go to the Chinese restaurant to get egg fried rice. You can make one serving for yourself in about 10 minutes. You will need 1/2 cup of rice, 1 cup of water, 1 tablespoon soy sauce, 1 teaspoon sesame oil, 2 strips of chopped bacon, 1/2 cup of frozen peas and carrots, 2 eggs, salt to taste and fresh scallions to garnish.</p><p>Mix the rice, water, soy sauce, and bacon and cook in a microwaveable safe dish for 6-8 minutes.  Then add the frozen peas and carrots. Beat the eggs with the salt. Add to the rice combination and microwave for 1-2 minutes until the eggs are fully cooked. Garnish the fried rice with scallions. Use hot mustard, duck sauce, and more soy sauce, if desired.</p><h2>Sweet Potato Chips</h2><p>You can make sweet potato chips as well as regular potato chips in the microwave. Both types of potatoes can be transformed into crispy and delicious chips in about 5 minutes in the microwave.</p><p>Whether you choose to make regular potato chips or sweet potato chips, scrub one large potato and remove all brown spots. Put in a bowl 1 teaspoon extra virgin olive oil, 1/2 teaspoon salt, and 1/4 teaspoon ground pepper. Put in thin slices of potatoes and toss to coat them.</p><p>Place the potatoes in a single layer on a microwaveable tray. Microwave for 3 to 4 minutes or until crispy. The chips are best served immediately. You can sprinkle salt on the white potato chips and cinnamon on the sweet potato chips.</p><h2>Banana Pudding</h2><p>If you ever have a sweet tooth with no dessert in the house, then make a quick one in your microwave. A banana pudding is easy to make if you have bananas available.</p><p>Melt butter in a microwaveable dish for about 30 seconds. Add slices of bananas, butter, sugar, flour, cinnamon, eggs, and milk. Make sure all ingredients are thoroughly mixed. Place banana slices on the top. Return the dish to the microwave, and cook for 8 minutes. Serve warm with a scoop of ice cream.</p><figure>

    </figure><h2>Brownie for One </h2><p>It is so easy to make one brownie. The drawback is that one brownie might not be enough for you. To make one brownie in a microwaveable cup, add 4 tablespoons of flour, 3 tablespoons of sugar, a pinch of salt, 1/8 teaspoon of baking powder, 1 tablespoon of melted butter, 1 tablespoon of oil, 1 tablespoon of water, 1/4 teaspoon of vanilla extract, and 2 tablespoons of Hershey's Dark Cocoa Powder.</p><p>Melt butter in a microwave-safe cup. Add the oil and mix well. Add in vanilla extract and water. Stir well to combine the mixture. Add all dry ingredients. Microwave just 70 minutes. Even though some cakes and cookies don't need to be decorated, frosting is usually the option most bakers choose. Not only is frosting used to beautify the dessert, but it also enhances the taste.</p><p>Use frosting instead of icing if you want a creamy and buttery taste. Frosting is thicker than icing because it has a cream base instead of a sugar base. The butter in frosting gives the finished product a stronger, buttery taste. That date is usually three years from when it was placed on the shelf in the grocery store. Meats in the cans like tuna, corned beef hash and SPAM can be eaten between two to five years after their expiration dates.</p><h2>7. Cereal</h2><p>Don't be so quick to toss those boxes of cereal when they reach their expiration date. If boxes have been kept in your pantry or cupboard unopened, cereal will stay fresh from six to eight months past the date on the box. If the box has been opened, it will last between four and six months. It is a different story if the cereal has been cooked like oatmeal. Cooked cereal should be kept only four to five days in the refrigerator.</p><h2>8. Cheese</h2><p>Cheese can usually be eaten a month past its expiration date. Even if you see mold on cheese, you can still eat it. Just cut off the mold first.</p><figure>

In just three days, the corn will be only half as sweet and delicious as it was when harvested. If you purchase corn on the cob without the husks, the kernels will dry out very fast. Fish</h2><p>Fresh fish only lasts for two days in the refrigerator. Cook clams, oysters, or mussels as soon as possible. Raw fish can last between six and nine months if you freeze it. Smoked fish can last for three to six months in the freezer. Commercially frozen fish will keep for ten to twelve months. Unopened canned fish such as tuna can keep for between two and five years past its printed date.</p><h2>14. Frozen Foods</h2><p>Raw meat and poultry will only keep for a few days in the refrigerator. However, they can be kept past their sell-by date if you freeze them. Frozen ground meat will last three to four months. Whole chickens and turkeys can be kept frozen up to one year.</p><p>Many people buy meats and other foods in bulk. They place them in the freezer and forget about them. It is better to mark them with the date you put them in the freezer. Meats, vegetables, bread, and pastries can be eaten up to two months past their expiration dates when they are frozen. The cold temperature keeps them safe past the date on the package. Unopened packages of frozen fruit and frozen vegetables are good for eight to ten months beyond their printed date.</p><figure>

The dictionary defines stuffing as a mixture used to stuff another food before it is cooked. When the same ingredients are cooked outside the cavity of poultry, it is not stuffing because nothing has been stuffed.</p><p>It should make sense that stuffing is stuffed inside the cavity of any poultry before it is cooked, and dressing is a separate dish cooked in a pan outside the bird.</p><h2>Which Came First: Stuffing or Dressing?</h2><p>The term "stuffing" was the first to appear. The Oxford Dictionary traces the word back to 1538 and defines it as "a mixture used to stuff poultry or meat before cooking." The word was used in the Roman Empire in a collection of Roman dishes.</p><p>On the other hand, the word “dressing” didn't appear until the 1850s. It was the Victorians who settled on the word "dressing" instead of “stuffing" because they considered the word offensive. If you want the last bit left in the cup or bowl, tip the container away from you instead of toward you.</p><p>Always keep the container on the table. Never lift it to bring it to your mouth.     </figure><p>One Tuesday, I told my sister I had fish for dinner. She almost had a fit. She questioned me by asking why I ate fish on Tuesday instead of waiting until Friday. I told her my stomach did not know which day of the week it was. Besides, I wanted to eat fish on Tuesday and didn't feel the need to wait several days to satisfy my taste buds.</p><p>In some families and cultures, certain foods are earmarked to be eaten on designated days. My sister remembered that when we grew up in the South, we ate fish only on Fridays. It was unheard of to eat it on any other day.</p><p>My sister acted as though I had committed a deadly sin by eating fish on a day other than Friday. However, I did not feel guilty because I no longer have designated days to eat what I want to eat.</p><h2>Certain Foods on Holidays</h2><p>It is definitely not unusual to eat certain foods on holidays. For example, it is popular to eat turkey on Thanksgiving, and corn beef and cabbage on St. Patrick Day.</p><p>Certain foods are also eaten on Christmas Day, Easter, and Fourth of July. It is not boring to eat those foods that represent the holidays because it is done only once a year.</p><p>What if you were locked into having a certain food on a designated day every week?</p><h2>Example of My Family's Menu</h2><p>While growing up in the South, my family had certain foods to eat on designated days of the week.</p><ul><li><strong>Sunday:</strong> always chicken, usually fried.</li>
<li><strong>Monday:</strong> there was no chicken left over, so a pot of navy beans was served</li>
<li><strong>Tuesday:</strong> leftover navy beans if any were left</li>
<li><strong>Wednesday:</strong> pork chops smothered in gravy</li>
<li><strong>Thursday:</strong> spaghetti and meat sauce</li>
<li><strong>Friday:</strong> always fish</li>
<li><strong>Saturday:</strong> hot dogs and pork and beans</li>

</ul><p>That was a typical weekly menu for our family.</p><h2>Foods Starting With the Same Letter of the Day</h2><p>There is a story about a boy who suffered from Tourette syndrome. He would never eat a food unless it started with the first letter of the day of the week. For instance, he would not eat waffles on Tuesday. He would only eat them on Wednesday. On Tuesdays, he would eat tomatoes, turkey or another food that starts with a "t."</p><p>Some people who do not suffer from Tourette syndrome also have a method of how they cook food for their family. There are cultural reasons, religious reasons, and agriculture reasons for the foods people eat on certain days.</p><p>In reference to the introduction where this writer related the comment about not waiting until Friday to eat fish was not based on a Tourette syndrome. It was based on a tradition that was passed down in our family.</p><h2>Foods Eaten on Certain Days Around the World</h2><p>It is not unusual for people around the world to eat certain foods on designated days. That choice dates back to colonial times when people were forbidden to cook between sundown on Saturday to sundown on Sunday. However, if you run out of one, you could get away with using the other as a substitute on a temporary basis. It is uncooked and slightly greasy.</p><p>According to Wikipedia:</p><blockquote><p>Mayonnaise is a thick, creamy sauce often used as a condiment. It is made with oil, egg yolks and either vinegar or lemon juice.</p></blockquote><p>Mayo is a thick, cold sauce or dressing. The color of mayonnaise could be white, cream color, or pale yellow. It may range in texture from a light cream to a thick gel.</p><p>Mayo sales have doubled since 2005.<strong> </strong>Americans purchase approximately 177 million gallons of mayonnaise every year. To put that in perspective, that's enough mayonnaise to fill 268 Olympic size swimming pools or two-thirds of the Empire State Building.</p><p>Mayonnaise is a booming business even though people can make their own at home. Americans spend at least $2 billion on it every year. That's more than on any other condiment including ketchup. Mayo is used on foods other than just sandwiches. It is included in pasta salad, chicken salad, tuna salad, salmon cakes, deviled eggs, potato salad, and sushi.</p><p>It is hard to come to an agreement about how mayonnaise should be categorized.     </figure><h2>What Is Miracle Whip?</h2><p>Miracle Whip is a salad dressing manufactured by Kraft Foods and sold throughout the United States and Canada. It was debuted at the World's Fair in Chicago in 1933. It soon became a success as a condiment on fruits, vegetables, sandwiches, and in salads.</p><p>According to Wikipedia:</p><blockquote><p>"Miracle Whip does not meet the minimum requirement of 65 percent  vegetable oil to be labeled as mayonnaise as dictated by the U.S. Food and Drug Administration."</p></blockquote><p>Water is the first ingredient in Miracle Whip with some oil, sugar, and cornstarch to thicken, a little bit of egg, and some salt and flavorings. On a low sodium diet (which is near-impossible to do, 8oz of any affordable meat but pork is likely to use up your entire daily allowance without adding anything) where every bit of sodium matters, miracle whip is 1% higher.  For diabetics, miracle whip has 10x as much sugar. The date is only to advise the consumer that the quality of the food might be different from what it was when it was first purchased if eaten after that date. For instance, bread may be eaten after the best before date. However, it will not be as fresh as the date you purchased it, but you can still use it for toast, croutons, or even bread pudding.</p><p><strong>It is helpful to know that the best before date is about quality which includes flavor, freshness, crispness, smell, and texture. The date has nothing to do with safety except when it comes to eggs and baby formula.</strong></p><p>Eggs could contain salmonella. Therefore, make sure you eat your eggs according to the best before date that is printed on the carton and not from the date you purchased them from your local grocery store.</p><div></div><h2>"Best Used By" or "Best By" Date</h2><p><strong>A best used by or best by date on a package means the food should be eaten by that date for maximum quality.</strong> Milk will spoil after the marked date. Bags of salad will turn brown and will not be fit to eat.</p><p>Not only will the quality of the food have changed by the specified date, but the safety of it comes into question as well.</p><p>There are cases where the date on the package might not be accurate. If a food container of food is opened when it should be refrigerated, the best used by date is sooner than what is marked on the container. For example, organic peanut butter should be refrigerated.     </figure><h2>"Display Until"  or "Sell By" Date</h2><p>The display until date on a product does not apply to the consumer. It is there to let shopkeepers know how long to display the product on their shelves for the best quality. Sometimes store owners will reduce the price days before the display date to get rid of those foods. Most of the products are still good. The use by date should still be honored even though you bought the product on sale because of its open date.</p><p>You have probably seen companies that deliver bread and other product emptying shelves of products with an opening date on them. They take out the old loaves and replenish the shelves with fresh loaves.</p><p>The sell-by date is mostly for the store to keep track of products that should not be sold after a particular date. You will see that prominently stamped on bags of salad. You can buy food that has already passed its display until date or sell-by date but has not reached its use by or best before date. That's before it is still safe to eat.</p><p>Some stores throw away the expired food or sell it to discount stores. The discount stores sell the food at a reduced rate.</p><p>Customers should be careful when shopping because some stores will be products with earlier dates up front on shelves so customers could buy them first. However, products have been rotated so the later days will be in the back after stores have rotated their stock.</p><figure>

Corn prepared on the grill is so delicious, but there are many other ways to cook it, as well. Many additional colors exist, but they are rarely available in major stores. Dark purple, brown, white, and lavender varieties also exist and can sometimes be found at farmers' markets and specialty stores.</p><h2>Why Do Some Colors Cost More Than Others?</h2><p>People often wonder why bell pepper prices vary so much depending on color. Most store clerks don't even know why the green peppers are cheaper than the yellow, orange, and red ones. The answer is quite simple.</p><p>The yellow, orange, and red peppers are more expensive than the green ones because they are harvested later and spend more time on the vine. The green ones are the cheapest because they are picked earlier while they are still unripe.</p><p>The ripe yellow, orange, and red peppers available at stores are left on the plant longer, meaning they receive additional time, water, and care from farmers. They all start out green and change colors as they mature. The pepper comes on the vine as green. Then it changes to yellow. If it stays on the vine longer, it turns to orange. I had thought that the red ones were dearer as they were more popular, but it turns out the green ones are more popular and cheaper too.
